pork fillet in a crust of bread
















Ingredients for 6 people

2 pork fillets (about 1 kg.)
red wine, rosemary, sage, bay

gr.120 battened
bacon 2 tablespoons mustard pickle

the bread dough: 100 gr flour 00

gr.150 of Manitoba
ml.150 water
ml.50
milk 1 cube of yeast
1 teaspoon sugar 1 tablespoon
extra virgin olive
salt.

Arrange the fillets whole in a bowl and cover them with red wine flavored with sage, bay leaves and rosemary.
Allow to marinate for 5 to 6 hours.
Meanwhile, prepare the bread dough and allow to rise.
Remove fillets from marinade, pat dry and season with salt.
Divide the dough into two pieces and roll out a rectangle on waxed paper.
Coat fillet with mustard and wrap the other with the bacon. Place the center of each rectangle of dough and seal carefully sealed.
Bake at 160 degrees for about 45 minutes.
