INGREDIENTS for 4 people
750 ml milk 100 gr sugar 200 gr semolina
gr.20 soy margarine ( or butter) 3 eggs
gr.100 raisins
salt grated rind of one lemon 2 tablespoons marsala
powdered sugar In a saucepan, boil the milk, margarine, sugar and pour in the semolina rain, stirring for a few minutes until it hardens.
Remove from the heat and allow to cool.
Meanwhile, place the raisins soaked in the marsala and place the egg whites whites.
Pour dough egg yolks, egg whites, raisins, grated lemon zest and a pinch of salt.
Put the semolina into molds or muffin obtaining balls to place on parchment paper.
Bake at 200 degrees for 30-40 minutes.
Serve "pancakes" warm sprinkled with powdered sugar.
